When I set out to make dinner after a long day, I find nothing better than a meal cooked in just one pan. This Mediterranean chicken recipe is one of my go-to weeknight meals and with good reason. It’s hearty, healthy, filled with flavor, and since everything cooks in one pan, clean up is easy.

For this chicken recipe, chicken breasts simmer in broth along with garlic, artichokes, olives, and onions.

How To Cook Chicken In A Skillet

  • Begin by placing two chicken breasts between two sheets of plastic wrap.
  • Pound the chicken with a skillet or a meat tenderizer to flatten the breasts. This helps the chicken cook quickly and keeps them juicy.
  • Season both sides of the chicken.
  • Heat oil in a skillet over medium-high heat.
  • Add the chicken and cook, undisturbed, until golden on the bottom, 4 to 5 minutes; turn and cook until the other side is golden, 2 to 3 minutes more. Transfer chicken to a plate and set aside.
  • Return the skillet to the stove and add 1 tablespoon of olive oil to the pan and when hot, add the artichoke hearts and onions and cook until onion has softened a bit, about 2 minutes. Season with a pinch of salt and pepper and continue cooking until vegetables are tender, about 2 minutes more.
  • Add garlic and oregano and cook, stirring, 30 seconds.
  • Return the chicken to the skillet and add the broth and olives. Bring to a gentle simmer, cover and cook until the chicken is cooked through, 4 to 6 minutes.
